A photographic celebration of IVF

Images of Hope 2010, in support of the Generations of Hope Fertility Assistance Fund, takes place Friday, March 5, 2010 at Hotel Arts.

This year's event promises to be better than ever with all new photographs by our generous group of local professional photographers. The evening will feature a catered reception with cocktails and hors d'oeuvres, and silent and live auctions with fantastic items to bid on. This year's event live auction items include a Disney World Resort family adventure and tickets to an "O" so exciting place...stay tuned for details!

Images of Hope is coordinated by volunteers and all net proceeds from the event go to the Generations of Hope Fund, to provide financial assistance to people facing the challenge of infertility, but who also find the high cost of IVF and other fertility treatment financially challenging.

TWO EASY SNACK RECIPES

The days still feel long and we are needing snacks that are healthy, creative and do not need much preparation.  These healthy, hardy snacks will keep us energized as we await longer days and warmer weather.  

Fruit Fingers for Children and Toddlers
1/4 cup of apple sauce
1/2 cup of maple syrup
1 egg beaten
3/4 cup of carrots and/or apple grated
2 small bananas mashed
1 cup of flour (can substitute spelt four)
11/4 tsp baking powder
pinch of salt
1/2 cup of raisins, dried cherries or other dried fruit
1 tsp of orange or lemon zest

Pre heat oven to 350F

Mix dried ingredients: flour, salt and baking powder- set aside.
Mix apple sauce with maple syrup in a bowl.  Gradually beat in the egg.  Mix in carrots or apples, bananas and add in flour mixture.  Add extra flour if necessary- spoon should stand up in mixture.  (I often add an extra quarter of a cup).

Turn the mixture into a greased 7 inch shallow, square pan and level the surface.  Bake until golden brown for 45 minutes.

Cool and cut into fingers to serve.


Granola
2 cups of oatmeal (not instant)
1 heaped cup of mixed nuts- almonds, hazelnuts, pecans- unsalted
1.5 cups of dried fruit- unsulphured- prunes, dates, apricots, cherries, raisins...
1/2 cup of mixed seeds- flax, poppy seeds, sesame seeds
1 cup of shredded coconut
1 tsp of cinnamon
5 Tbsp of maple syrup
5 Tbsp of olive oil

Pre Heat oven to 350.
Combine all dry ingredients except the fruit on a cookie sheet.
Mix well, drizzle with olive oil and maple syrup.
Place in oven to cook- every 5 minutes take out, stir and then put back in the oven for a total cooking time of 30 minutes. Remove when golden.
Add the dried fruit to the cooled, golden granola.
